Inspired by pinterest, forced on to me by my lack of groceries, this is a go-to dinner recipe during the week. If the egg is undercooked, the runny yolk serves as a sauce that compliments the parmesan, asparagus and turkey bacon well.
6 Asparagus Stalks
1/2 Tablespoon Olive Oil
1/3 Cup Parmesan
2 Strips Turkey Bacon, sliced in half
Garlic Powder (I use about 1/2 Tbsp)
1 PREP WORK
Preheat oven to 420. Prep asparagus spears by washing and trimming ends. Cover in olive oil and garlic powder. Proceed to wrap with turkey bacon and sprinkle with parmesan.
Place tray with asparagus in oven, leave to bake for about 15 min. While that's cooking, broil egg on cook stove.
3 MOMENT OF TRUTH
When asparagus begins to look crisp and parmesan has melted, remove from oven and plate. Top with egg, salt, pepper, and hot sauce if you're feeling saucy.
